When the dog days of summer kick in, nothing is more refreshing than a delicious (and healthy) watermelon salad. This month’s recipe, courtesy of AMBA, perfectly combines watermelon, cool cucumbers, salty feta, and a pop of fresh mint. It’s sweet and salty, while the lime-honey dressing adds an extra kick.
The recipe only takes 15 minutes to prepare and serves 8. Have fun with it! You can build on this recipe by adding avocado, red onions, peppers, or any other ingredient you and your guests enjoy!
Pro Tip:
The salad should be prepared and served immediately for maximum freshness and flavor. The dressing can be prepared up to 3 days in advance and stored in the fridge.
